Tonight I am writing about food.

The first thing I will write about are devilled kidneys. I have just discovered them and they are my new favourite food both for breakfast and supper. (Yes I have eaten kidneys for breakfast channelling my inner Edwardian.)

Anyway the recipe I used is this one http://www.bbc.co.uk/food/recipes/devilled_kidneys_58867 it is quick, easy and really very tasty. I add a little cayenne pepper and use corn flour instead of plain but the rest is as the recipe says.

They work very nicely on thick crusty toast for breakfast and with rice for supper.

Now rice, cooking rice is easy. All you need is reasonably good quality rice and a saucepan with a lid. The trick is to know the correct proportions of rice to water. Also don’t use easy cook rice, that stuff is horrible.

The proportions of rice to water are easy 1 cup of rice to 1.5 cups of water. I know all the recipes say about washing the rice until the water runs clean, you can do that but I don’t.

Put the rice and water in a decent pan and put the lid on. Now you have to be brave you cannot take the lid off until the cooking is done. If you have a pan with a transparent lid things are easier.

Put it on a low heat and let it cook, you must not take the lid off you need the steam to build up in the pan to cook your rice properly. If the lid is see through you can see when all the water has been absorbed then turn off the heat and let it stand for 10 minutes or so. Again do not take off the lid during this time. If the lid is not see through I normally find that it has absorbed all the water after about 10 – 12 minutes.

The rice is then ready fluff with a fork and serve.
